Tuna and White Bean Salad
1/2 cup chopped fresh parsley
1/2 cup sweet onion, diced small
1/2 cup red bell pepper, diced small
1 1/2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15.5-ounce) can white kidney beans, rinsed and drained
12-ounces chunk light tuna
assorted baby greens
Combine all ingredients except greens in a large bowl; toss well to coat. Serve on baby greens.
